Winter can be a tough time for students in the UK, especially given the strands of flu currently working their way through many universities around the country. One of the best ways to stay healthy during the droll winter months is to ensure that you are eating a healthy and balanced diet, and complementing this with a good exercise regime.

The team at Almero Student Mansions have put together some of our favourite winter food recipes that we think are perfect for students looking to feel healthy and great and of course, enjoy some great cuisine.

 

Almero’s Top Three Student Recipes for the Winter

Although there are hundreds of winter recipes that could be perfect for you depending on your taste and preference, we have selected our top three for you to choose from.

We have selected one for vegetarians, one for carnivores and also one for anyone who likes something a little fiery when looking for quick recipes they can knock up when at university.

 

1. Vegetable & Lentil Soup

There is no winter warmer quite like a soup and this winter vegetable and lentil recipe contains all the nutrients you need to stay healthy through even the chilliest of winter weather. None of the ingredients in this dish are particularly expensive and they can all be found at your local market, supermarket or online.

The bonus of soups is that as well as being healthy and very thrifty, all you really need to do is stick it all into a large pan, add your water and leave to boil for about half an hour. Just check that you don’t overcook your vegetables as they may become mushy and taste a bit like bad school dinners.

Just ladle into a bowl when it is done, add some crusty bread and butter and you have yourself the ultimate student winter warmer, an absolute winner!

 

Ingredients

85g dried red lentils

2 carrots, quartered lengthways then diced

3 sticks celery

2 small leeks, sliced

2 tbsp tomato purée

1 tbsp fresh thyme leaves

3 large garlic cloves, chopped

1 tbsp vegetable bouillon powder

1 heaped tsp ground coriander

2. Fiery Fajitas

Many people regard fajitas to be quite a fancy or extravagant meal, but they are actually remarkably cheap to make. Especially if you avoid the meal kits, which can be expensive and actually not quite as good as making some of the bits and pieces from scratch.

We have listed the classic ingredients you need below if you are looking for dinner ideas for a bunch of people who like a bit of spice. This one is sure to leave you feeling pretty cosy when it is torrential or icy outside.

If you are pretty good in the kitchen then you won’t need much instruction for this one but you can see the vital spices below, which are usually all you will get in a fajita kit. You can also choose your own meat or even go for a veggie option by adding bits such as aubergine and sweetcorn.

As quick recipes go, they don’t come much better than fajitas as you literally stick it all in a wok or pan, fry it up, add your choice of extras and place it all in wraps.

 

Ingredients

2 tsp ground cumin

2 tsp ground coriander

pinch cayenne pepper

2 tbsp vegetable oil

1 onion halved and sliced

3 red peppers, cut into strips

300g rump steak, sliced

Small handful fresh coriander leaves

8  tortilla wraps

100g cheese, grated

2 tubs of guacamole and sour cream

 

3. Beef & Vegetable Casserole

A guide to winter recipes wouldn’t really be complete without a casserole, would it? Following our vegetarian and fiery options, we think a beef and vegetable casserole is a perfect way to conclude our guide to the best student recipes for the wintery months.

As with all three of our options, this dish doesn’t really require much culinary nous either. You simply soften the vegetables by steaming them in a casserole with water, before adding your other ingredients gradually and covering before sticking in the oven for two and half hours.

Serve with some creamy mash and you have a meal that will never fail to hit the spot.

1 chopped onion

2 really big carrots halved lengthways then very chunkily sliced

5 bay leave3 sprigs of thyme

1 tbsp vegetable oil

1 tbsp butter

2 tbsp plain flour

2 tbsp tomato purée

2 tbsp Worcestershire sauce

2 beef stock cubes, crumbled

850g stewing beef
